A wine that definitely isn't your average Riesling. It takes everything you thought you knew about the variety and throws it out of the window. Although still very much in "fine wine territory," you can expect more of a layered style from this wine, with nutty, oxidative hints. A long fermentation gives a Riesling that's a little softer in the mouth, a little rounder, with all that wonderful stoniness that the grape has to offer but met with a fleshy texture like the inside of a perfectly ripe peach. 

From Hollenburg in the Kremstal region of Austria, this is a Riesling produced from 25-35 year old vines. It is fermented naturally and aged in old barrels. It is a Non-Vintage wine (NV), which means that it is produced from wines made across multiple vintages. Some wines are seven months old, and other wines are 32 months old.

Various winemaking techniques are used across all barrels, according to what Christoph feels is best for that specific wine. Bottled with a very small addition of 20mg/L sulphur.
