Karl Sjöström and Mikael Nypelius are the masterminds behind the incredible mini cosmos known as Fruktstereo, which has been one of Sweden’s most forward thinking agricultural projects in the past 10 years. Here, multifruit fermentations take centre stage, and the idea of creating delicious beverages working across a range of different raw materials is the focus.
While their main focus continues to stay on fruit ferments (apples, pears and many other local fruits and vegetables) we were hooked by their
new venture called Rocket Brewing, and naturally, the exclusive collaboration with Newcomer veteran Claus Preisinger.
Fruktinger is a delicious blend of Saison brewed in Malmö with head brewer Kim from Rocket Brewing, blended with wine and lees made by Claus. This is then topped up with fresh fermenting rhubarb juice that Karl, Mikael and their team harvested earlier this year.
