Kalk und Kiesel White 2021
A skin-contact gem with a unique upbringing! Weissburgunder, Grüner Veltliner and Muscat are fermented on their skins for 3-5 days in large stainless steel 'flower pots' and concrete and then aged in concrete egg and large Austrian barrels. The result is a light, honey-colored wine, with a lovely balance of stone fruit and a bit of structure. Elegant and zesty but with an extra layer of depth.
The wine comes from Claus' biodynamic vineyards in the Burgenland, Austria. As the name suggests, this is a blend from various plots around Lake Neusiedl - some on limestone (Kalk in German) and some on pebbles (Kiesel in German).
Fermentation took place on the skins, and the wine was aged on its lees in old barrels for eight months. Bottled unfined and unfiltered.
