A classic expression of Jacquere from the Savoie – fresh with a bracing acidity, notes of ripe apple, a flinty, smokey quality, and a clean and elegant finish. Grapes are pressed very gently using an old Coquard press (widely used in Champagne for the quality of extraction) and fermented directly in oak – Mathieu Goury makes wines made using an old-school approach and a 'no-compromise' approach to quality, which is immediately evident as soon as you taste them.
