A brand new cuvée, Solarium is Recerca’s example of a Rancio wine. 100% Maccabeo, Solarium has the brightness expected from Maccabeo, but combines it with a deep caramel and nuttiness from 10 years in barrel, not topped up, followed by 2 years in bottle. This is a rare cuvée that’s oxidative, savoury and pairs perfectly with cheese or salted anchovies.
