This wine is made from 100% Hibernal - a sturdy white grape created by crossing Riesling with the lesser known Seibel variety. The grapes were kept on the skins for 48 hours, giving the wine some tannic depth and a distinctive aroma that beautifully compliments the fresh character of the wine.
The grapes come from 10 year old vines planted on sandy clay soils. The wine was fermented and aged in 600 litre barrels for 13 months. A third of the barrels are new oak. The wine was bottled unfined and unfiltered.
